The dairy is closely linked to breeding and has been designed with applications of technological innovations, including the molecular fractionation of milk with ultrasound (in the course of being patented). All of our cow's milk, sheep & goat's milk and buffalo milk are processed this way in the dairy.
Non-genetically modified vegetable rennet
Wild plants, harvested in a wooded and natural environment, are used for the production of non-genetically modified plant coagulants complex, patented under company management. The coagulant complexes obtained allow excellent cheese making, eliminating any bitter aftertaste, typical of vegetable curds, and increasing the curd's yield in fresh cheeses and shortening curing time for more seasoned ones.
