The coagulation is carried out with a new microwave technology (also being patented), and with the use of non-genetically modified vegetable coagulants complex.
GranGravine cheeses are made from high quality milk obtained from the cows of the Terra delle Gravine, who have been solely fed with high protein hydroponic fodder, and to which non-genetically modified vegetable coagulant complex has been added.
This allows for an exquisite hard-paste cheese without carbohydrates, with an excellent sensory taste, rich in nutritional substances and easily digestible, thanks to the very low content of casein. It is an important source of calcium, a fundamental element for bones, which in many diets is lacking.
