The wheat obtained from the cultivation of traditional Apulian cultivars (Senatore Cappelli, Appulo, Arcangelo, Duilio, Simeto) is used to obtain durum wheat flour for the production of bread with mother yeast and baked in wood-fired ovens.

The cultivation of olive groves with native olive trees, (Coratina, Ogliarola, Cellina, Frantoio, Leccino, Picholine), is the source for our extra-virgin olive oils, all of which contain high polyphenolic levels.

using modern methods and native vines, (Primitivo, Negroamaro, Aleatico, Malvasia, Verdeca, Minutolo), are what gives us our deliciously aromatic Terra delle Gravine wines, made from grapes vinified and refined without sulfites
